Die gew\u00fcrfelten Auberginen 10 Minuten and\u00fcnsten. Klein gew\u00fcrfelte Zwiebel, gehackten Knoblauch und Pinienkerne dazugeben und weitere 5 Minuten anbraten. Alle \u00fcbrigen Zutaten bis auf die Minze und die Tomaten zugeben und bei geschlossenem Deckel ca. 15 Minuten k\u00f6cheln. Immer mal wieder umr\u00fchren. Die Minzbl\u00e4ttchen fein schneiden. Einen Teil kurz vor Ende der Garzeit dazugeben. Die Kirschtomaten halbieren und ebenfalls kurz mit erw\u00e4rmen.
