Sojaschnetzel nach Packungsanweisung zubereiten und- falls n\u00f6tig &#8211; gut auspressen.<\/p>\n\n\n\n<p>Minze waschen und fein hacken. Zwiebel und Knoblauch sch\u00e4len und fein w\u00fcrfeln.<\/p>\n\n\n\n<p>Getrocknete und st\u00fcckige Tomaten fein p\u00fcrieren.<\/p>\n\n\n\n<p>Die Auberginenw\u00fcrfel in reichlich Oliven\u00f6l anbraten- ca. 5 Minuten. Die Zwiebel dazugeben und mitbraten. Tomatenmark zugeben und ebenfalls kurz anbraten. Knoblauch hinzuf\u00fcgen und mit Tomatenp\u00fcree abl\u00f6schen. Gew\u00fcrze, Minze, Agavendicksaft und Sojaschnetzel zugeben- noch etwas k\u00f6cheln lassen und am Ende den Zitronensaft unterr\u00fchren.<\/p>\n\n\n\n<p>Nudeln kochen und in der Zwischenzeit die Joghurtsauce herstellen: Gurke grob raspeln, mit Sojajoghurt, Zitronensaft und Minze (fein gehackt) verr\u00fchren.
