Wie auch immer- ein leckeres Curry geht immer. <\/p>\n\n\n\n<p>1 gro\u00dfe S\u00fc\u00dfkartoffel<\/p>\n\n\n\n<p>300g Belugalinsen<\/p>\n\n\n\n<p>100g Babyspinat<\/p>\n\n\n\n<p>1 Zwiebel<\/p>\n\n\n\n<p>1 Knoblauchzehe<\/p>\n\n\n\n<p>1 St\u00fcck Ingwer (ca. 2cm)<\/p>\n\n\n\n<p>1\/2 EL rote Currypaste<\/p>\n\n\n\n<p>1 Dose st\u00fcckige Tomaten<\/p>\n\n\n\n<p>1 Dose Kokosmilch<\/p>\n\n\n\n<p>500ml Gem\u00fcsebr\u00fche<\/p>\n\n\n\n<p>Pfeffer und Salz<\/p>\n\n\n\n<p>1 Limette<\/p>\n\n\n\n<p>1 Bund Koriander<\/p>\n\n\n\n<p>Zwiebel, Knoblauch und Ingwer sch\u00e4len und alles sehr fein w\u00fcrfeln. Zwiebel in reichlich \u00d6l anbraten, Ingwer und Knoblauch nur kurz mitbraten. Die gewaschenen Linsen zugeben und mit Gem\u00fcsebr\u00fche, Kokosmilch und Tomaten auff\u00fcllen. Die Currypaste zugeben und nach ca. 10 Minuten die gesch\u00e4lte und gew\u00fcrfelte S\u00fc\u00dfkartoffel zugeben. Weitere 20 Minuten kochen. Den Spinat erst ganz am Ende unterr\u00fchren und nur kurz mitk\u00f6cheln. MIt Pfeffer und Salz abschmecken und den Saft der Limette dazugeben.
